Banana Pancake Redux

Happy National Pancake Day, my fellow Americans! Someday we’ll fulfill our goal of International Pancake Day. It’s within our grasp, folks. We can do it!
My dad reminded me of this joyous occasion via email this morning, which got me thinking, naturally, about dinner! I decided to refine my caramelized banana pancake recipe. While my last attempt was delicious, I wanted to develop a bit more flavor. Tonight’s batch of pancakes were extra fluffy and cakey, while the banana caramel sauce was aromatic with just enough sweetness. To balance the sugar in the pancakes, I also cooked up awesome apple turkey sausage patties.
This meal is definitely going in my top 5 ever. SO GOOD!

Caramelized Banana Pancakes
Yields 6 pancakes

Ingredients:
For pancakes

1 1/4 C  pancake mix (I use Hungry Jack complete)
1 C water

For banana caramel sauce
1 Tbsp unsalted butter
1/4 C brown sugar
1 tsp vanilla
1/4 tsp cinnamon
1-3 tbsp. water
1 banana, peeled and sliced

  • Preheat griddle or skillet to 400° (medium-high). In a small bowl, add water to the pancake mix and stir together. Set aside. I use slightly more mix than the 1:1 ratio called for, as I like my pancakes to be thick, fluffy, and cake like. To achieve this, add enough dry mix to your bowl until batter is thick, like a runny dough.
  • In a small saucepan on low heat, melt butter and stir in brown sugar, vanilla, and cinnamon. Cook 1-2 minutes until brown sugar is dissolved.
  • Place sliced banana in single layer in saucepan. Make sure the sauce coats the fruit. Continue to reduce sauce for 3-4 minutes, basting bananas and stirring occasionally. If the sauce is too thick, add water until desired consistency is reached.
  • While sauce reduces, ladle pancake batter onto griddle, flipping them when small bubbles appear on the surafce.
  • Once pancakes are done, place on plate and top with banana caramel sauce. Dig in!

Apple Turkey Sausage Patties
Makes 4 patties

Ingredients:
2 Tbsp extra virgin olive oil
1/4 C onion, diced
1/2 C apple, grated (I use Fuji apples)
1 clove of garlic, minced
1/2 lb. lean ground turkey
3/4 Tbsp dried thyme (use less if using fresh herbs)
1/2 Tbsp sage
3/4 tsp salt
1/2 tsp pepper

  • Drizzle olive oil in a medium saute pan over medium heat. Add onion and apple and saute for 4-5 minutes, stirring occasionally.
  • Add garlic and cook for an additional 1 minute. Remove from heat and allow mixture to cool.
  • Meanwhile, combine ground turkey with thyme, sage, salt, and pepper. Add cooled onion, apple, and garlic mixture and mix together.
  • Section meat mixture into 4 patties. Reheat saute pan over medium heat and add sausage patties.
  • Cook 3-4 minutes each side, until golden brown and cooked through.

An Oscar for Deliciousness

As promised, here’s a more upbeat post to start the week off right :)

After bailing on my friend this weekend and hoping she’d understand my reasoning (see below), she suggested we hang out Sunday and judge watch the fashions on the Oscar red carpet. S0 I woke up a bit early, hit the gym hard for an hour, then spent the rest of the morning/afternoon cleaning up my mess of an apartment (more calories burned!). By the time my friend made it over, I was exhausted. Which was good, because she, too, was a bit–ahem–tired. After lazing around for awhile, we ventured into the windy, gray afternoon and walked to my new favorite frozen yogurt shop.

I got about a 1/2 cup each (100 calories, no fat) of vanilla and glazed donut (what?!) and topped it off with a surprisingly delicious sprinkling of strawberries, bananas, and then a few sprinkles and mini-peanut butter cups (just a few, promise!). We’re both trying to be healthier, so we spent a fair amount of time analyzing the calorie content of our selections. In the end, my yogurt splurge was right around 400 calories and fit nicely into my daily calorie allowance.

For dinner, I had planned to make a pot of soup, but since I’m really trying to watch my sodium intake and eat super basic food for the next few weeks, I nixed that plan. Instead, I reheated a leftover chicken breast and a cup of brown rice. After cooking up a bit of my new favorite lemon sauce and adding it to the mix, dinner was served!
Lemon Sauce
Yields 1 C (4 servings)

Ingredients:
2/3 C low-sodium chicken stock
1/4 C fresh lemon juice
1/4 C sugar
zest of 1/2 lemon
1 Tbsp cornstarch
1 Tbsp cold water
salt and pepper to taste

  • Mix cornstarch and water together in small bowl and set aside.
  • In a small saucepan, bring chicken stock to a boil. Add lemon juice, sugar, and zest.
  • Return mixture to a boil, letting it cook until sugar dissolves.
  • Slowly stir in cornstarch mixture and let sauce cook until thickened, stirring frequently and adjusting seasoning as necessary.

Obsessive Much?

I may have a problem. Well, another problem. This weekend I was supposed to go out  both Friday and Saturday night–dinner with friends on Friday, then a birthday party and more going out with friends on Saturday. But right now in my life, I’m so obsessively focused on my weight loss and on saving money (I’m desperately trying to get out of debt so I can accumulate more and open my bakery/cafe–more on that at a later time). All I think about is my work out schedule and what I’ll eat when. I only like to eat items for which I know the nutrition make up, and I am slowly cutting alcohol and soda out of my diet all together. And I don’t want to spend money on things that are ultimately bad for me. Like shopping for clothes or using a credit card to live, spending money and time on these things is not something I should be doing right now.

So if you take me outside of my little box, suggest that I imbibe with a delicious, expensive cocktail and indulge in a few oil-soaked french fries, I start to freak out. When will I work out? How long will it take me to burn off that vodka tonic? How will I pay for said vodka tonic? Good. Lord. My mind keeps going back to an episode of MTV’s True Life, where this guy wanted to lose a bunch of weight but had to cut himself off from the world in order to do so. He was too easily distracted and tempted by his friends, his family, his job. He cut himself out of all of that and focused only on losing weight. I’m afraid this is what will happen to me.

But I want it all! I want to lose the weight, broaden my social circle, be a vibrant member of my community, not be afraid to make eye contact with strangers in Target (yep, that’s real), etc. I don’t want just a piece of the pie, I want the whole damn thing! So the question is: how do I balance my weight loss with my social life? Or…

How do I have my cake and eat it, too?

Cabin Fever

I’ve got it, you guys. It’s bad. I’ve got the cabin fever. Even though we’ve had  zero snow this year here in typically winter-friendly Minnesota, I’m still feeling cooped up and anxious for some sunshine and warm temps. I’m over the dry hair/skin combo, the teasingly and uncharacteristically warm days, pasty pale skin, random snow flurries that never amount to anything (if it’s going to snow, it better snow), and I especially am over my winter wardrobe! I am taking my now annual sojurn down to Austin, Texas with the Mom and other family members in a few weeks, so that will absolutely help break my fever.

But it never fails that right around this time each year, I get to daydreaming about my favorite summery things. Also on the docket this year are a few things from my rewards list that are providing a great deal of weight-loss related inspiration and factoring greatly into my sunshiney fantasies.

In no particular order, the things I love most about summer…

  • Sunshine The warmth of it and, really, getting a little color on my pasty skin.
  • Nature and being outdoors The lakes, biking, hiking, camping, picnics, outdoor concerts, rooftop and patio happy hours, laying in the grass, all of it.
  • Sundresses and tank tops I don’t wear tank tops now, or dresses above the knee. I’m hoping to change both of those by the end of the summer!
  • Country music Something about cranking the tunes and driving around barefoot with the windows down, back in the little country town from whence I came, is just so dang appealing to me.
  • Campfires
  • Iced coffee I became obsessed with cold press coffee last year and bought myself a french press. I mix the brewed coffee with a little simple syrup (boil equal parts sugar and water until the sugar dissolves, cool, add to beverage)–heaven!
  • Sandals After a winter of socks and boots, sandals are a welcome summertime companion.
  • Summer cooking Local produce (melon, string beans, peas straight from the garden, corn on the cob), grilling out, dining al fresco, summer salads. Everything is bright, colorful, and fresh.
  • Twilight
  • Farmer’s Markets The farmer’s market in my part of town is arguably the best and biggest–and one of a very few that require all vendors and products be local. The selection, price, and quality is unbeatable. Nearly every Saturday, I head down with a friend to grab a coffee, do some quality people watching, and pick up fresh produce, swoon-worthy breads, amazing hummus, and gorgeous flowers. I plan to make an effort to do even more of my shopping there this summer.

Today has already felt like the longest day ever and it’s only 10:00 a.m. Yikes.

I’ve adopted a pretty sweet work schedule these past few days, since I’m one foot out the day (maybe both feet out the door, depending on the hour). I’m done by a little after 3:00 each day. Then I get my butt straight to the gym/running path and do work. It’s really a great schedule and it’s allowing me time to focus on my priorities right now–exercise and blogging.

I don’t know what I did to my knee, but when I went for my run on Wednesday, I was in complete agony. Oddly enough, the pain was considerably less debilitating when I was running vs. when I walked, so I would actually find myself looking forward to the run intervals. I think my weight, combined with both how bad running is for your knees, and the fact that I injured the same knee over a year ago and never completely resolved the issue, is what’s causing the pain. But I said, “screw it” and I powered through. Couldn’t get my shoe off my foot when I got home because I was in so much pain, but I made it! :) And I finally finished up week 2 (yes, it’s taken this long) of C25K and I’m starting week 3 tonight–3 minute runs, people!

Yesterday, in an attempt to soothe my aching knee, I hit up the pool at my gym. Funny story: I thought I had my old lady swimsuit (there may be a skirt involved–gross) in my gym bag, but when I arrived, I discovered that the only suit I had was my team suit from when I swam in high school. So it’s a Speedo size 12. And the elastic is crunchy and gross. But I’ll be damned if I didn’t wiggle and squeeze my way into it, though! I mean, the top part basically displayed my entire chest the entire time, but what are you going to do? By the way, it’s amazing to me just how out of shape I am. I was a long distance swimmer and now I can barely make it down and back in the pool without needing a break. Ugh. On the happy side of things, I reek of chlorine today and it makes me so happy :)

Ashes to Ashes

Yesterday was a fairly important day for most Christians, especially those in the Catholic Church–a religion in which I was raised but don’t really participate in now. Yesterday was Ash Wednesday, which marks the beginning of Lent. Without going into the specifics, I’ll just tell you that Lent is the 40 days leading up to Easter, during which it is tradition to give something up to show sacrifice and discipline. For example, we don’t eat meat on Ash Wednesday or any Friday during lent–a rule which led my family on the journey to discover the best fast food fish sandwich (it’s McDonald’s, naturally). Most people give up sweets, or TV, or something material that is difficult for them to live without. Side note, I have a friend who gives up Diet Coke every year, since she typically goes through a few cans a day and drank it the way most people drink water. In college the girl even carried multiple cans around with her in her purse.

My point in all this is to share with you my Lenten resolutions. I haven’t really been in the habit of giving things up over the past few years. In fact, I think the last time I participated in this was during college when I tried to giving up swearing. A friend of mine happily volunteered to punch me in the arm each time I swore, which happened a lot, so I’m not sure how well I hit the mark that year. This year I’m giving up two things that I’ve been fighting especially hard since I began this weight loss journey: laziness and fear. These two monsters are the be all, end all holding me back from achieving any and everything in my life. I am too afraid to get out in the world and live my life at this weight, so I sit at home, safe and sound, and watch TV. And eat.

To combat my laziness, I plan to workout at least once every day for the next 40 days. Not only will this put the laziness to bed (ha!), but it’ll break that “21 days to make a habit” rule that I’ve been struggling with. Hopefully, by Easter, exercise will finally just be a natural part of my daily life.

To combat my fear, I plan to just say “yes” more.  Too often I make excuses or back out of plans or shy away from the uncomfortable. I have a mantra that I’ve been repeating to myself a lot lately: “Nothing changes if you’re comfortable.” I plan to live this by making myself as uncomfortable as possible as often as I can. Bring it on, Lent! Let’s do this!

Match Made in Culinary Heaven

In all aspects of my life I am a fan of mixing and matching–friends, trends, and especially food. I love trying new flavors, tweaking my favorite recipes, and getting some very good (and very bad) results. My all-time favorite food combo that I take full credit for? The peanut butter and turkey sandwich. I especially love it with crunchy peanut butter and honey-smoked deli turkey. Hello, protein! I tell everyone about this sandwich, and everyone doubts me…until they try it. Give it a shot and I swear you’ll be hooked!

Until very recently, it never occurred to me to mix it up with my favorite breakfast cereals. Most mornings, breakfast unfortunately consists of a banana and a greek yogurt, or a slice of toast or oatmeal banana bread. But lately, when I take the time to pre-plan my meals for the day, or when I have extra time on the weekends, I am a big fan of the cereal mix.


My current favorite consists of 1/2 C Cheerios (chocolate or the new peanut butter flavor), 1/2 C Kashi Cinnamon Harvest and 1/2 C Silk unsweetened vanilla almond milk (less than 20 calories!). If I’m feeling especially adventurous, I add half a banana and/or a sprinkling of good old Fiber One. These twigs have virtually no flavor, and I’m not necessarily a fan, but they do add good texture to my bowl. So, you get a heaping serving of breakfast that’s chock full of fiber and calcium, you satisfy any sort of sweetness craving, and you do it all for less than 300 calories and 2 grams of fat. It can’t be beat!

Pizza! Pizza!

Last Thursday, to celebrate my new job and because everyone I know is on a super tight budget, I went with some friends to my favorite local pizza place to partake in the 2-for-1 deal they had going. Punch Pizza is straight-up classic and authentic Neopolitan pizza (read: wood-burning oven, real ingredients, crispy cracker-thin crust). My pizza below was a mouth-watering assembly of prosciutto, goat cheese, arugula, roasted garlic and red pepper flakes. So good! We paired our pizza with a carafe of the house red and it was a match truly made in heaven…or Naples.


Being the good girl that I am, I only ate half the pizza (so, two slices), and took the rest home. On the alcohol front, though, I had two of the small glasses of wine (pictured above) and two more drinks (vodka tonic–my fav) when we went across the street for a celebratory cocktail. A bit of a bummer, calorie-wise, but a bit of indulgence like that is necessary once in awhile. It did teach me that, when it comes to food, as good as I am on my own, when I’m cooking or can control the ingredients, I still need to be extra cautious and conscious of what I’m doing when I go out. It’s a process, people!

Weekend in the Country

Sorry for the lack of postage lately–I had a crazy exhausting week and took a much needed breather at my Grandparents’ house for the long weekend. I’m so happy to share that I got a new job on Thursday! I’m excited to start fresh and really get back to focusing on what I love to do. And anyone who knows me well knows that the past few years in my current job have been miserable. I’ve become a person that I don’t recognize and that I don’t like. Especially so in these past few weeks. So, I’m ecstatic to put it all behind, start anew and really focus on my weight loss!

As I mentioned, I spent the Holiday weekend out in the country at my Grandparents’. It’s always so nice to get away, disconnect, and remember where my priorities should lie. The majority of my extended family lives within a stone’s throw of one another, so it’s always a big to-do when my family comes to town. Lots of aunts, uncles, and cousins, and lots of good down-home cooking courtesy of my Grandmother. I was pretty adamant that I wasn’t going to fall victim to her breaded pork chops swimming in mushroom sauce or her butter laden deserts, as delicious as they are. She’s so supportive of what I’m doing, though, that she let me have free reign of the kitchen all weekend. I made pretty healthy choices–lots of salads, homemade vinaigrette, baked chicken, and plenty of walking and running. I even got my mom to run with me for a bit on Saturday!

Now that I’m back home and have officially given my notice at work, my biggest stressors, and literally all I will be focusing on in the next month or so are limited to the following: 1. Sweating. 2. Getting myself organized for our trip to Texas in a few weeks. Life is good!

Pop of Color

Happy Valentine’s Day, loves!

As great as life has been lately, I think the winter blahs (or the cabin fever, if you will) have finally set in. So on this, St. Valentine’s Day, the fakest holiday known to all of man, I thought I’d share with you all the three things that brought a pop of color to this gray (weather-wise only!) February day.

1. Flowers! My ever-thoughtful parents sent me a gorgeous little bouquet to celebrate the day. They’re always doing things like this, and I am so blessed to have them in my life.



2. Color comobs! I’m obsessed with the gray and pink color combo. I’m also really loving gray and yellow right now. Kinda appropriate, no? SO when a co-worker gifted me with a dish of these adorable little chocolates, I couldn’t help but fall in love. I did indulge in a few, but as I mentioned yesterday, the sweetness was just too cloying to enjoy. So I made sure to quickly whisk them out of my office and into the hands of a more than welcoming co-worker.


3. This bread! Flatout Bread. It’s not just a flatbread, it’s the most delicious flatbread ever. It tastes and smells like homemade bread (something you don’t find with most store-bought loaves), and has an amazing, chewy texture. I, sadly, had to venture to my local Wal-Mart to purchase it, but it was so worth the trip. I used it for lunch today with turkey, spinach and low-fat cheese, and this weekend I made a similarly delicious sandwich which I then panini-ed up. It is low in calories (100!), fat (1 gram!) and loaded with fiber and, surprisingly, protein (6 grams!).
There you have it–three pops of color that absolutely brightened my day. I also had a really great job interview today, enjoyed a glass of wine, and made plans to get together with a friend later this week. So, really it’s, like, six things…
